My Favorite Recipes from Paper & Cake Easy Pumpkin Spice Mini Bundt Cakes

When I say the easiest, I mean the easiest…pumpkin spice cake that is! My favorite recipes generally include few ingredients and even fewer steps and this one takes the cake {literally}. This recipe only has 4 ingredients and tastes like 10 different holiday spices in one bite! So easy and sooooo tasty, you have to try it.

Pumpkin Spice Mini Bundt Cakes

(yields 6 mini bundts or 3 pumpkin shapes)

1 can pureed pumpkin
1 box spiced cake mix
1/8 cup vanilla Frosting
1/2 cup maple syrup
Green licorice (optional)

1. Preheat oven to 350 degrees. Spray your mini bundt pan with nonstick.
2. Mix canned pumpkin and spice cake mix until smooth. Mixture will be thick.
3. Spoon mixture into bundts, filling about 2/3 full.
4. Bake 15 minutes, or until fully cooked. Remove from oven and let cool.
5. Once cool, you may need to carve the bottom of the bundts off to even out. Place one on top of the other to make a pumpkin shape.
6. Mix frosting and syrup into microwave safe container. Heat for 10-15 seconds in microwave until warm. Mix until smooth. (**substitute powdered sugar for frosting for thicker consistency)
7. Drizzle onto cakes as desired. Top off with a licorice stem and enjoy!


These little beauties would make a really great holiday breakfast change from the traditional coffee cake. All you have to do is add a cup of coffee =)
