You heard me. S’mores whoppie pies. What more could you ask for, really.
Picture this, you are camping out in the wilderness you are throwing a party and have decorated with our adorable (and printable I might add) camping themed kit. You are warm and cozy, snuggled up with some coffee and a giant plate of s’mores whoppie pies. You don’t share them. The end. Oh, first you have to make them, and boy are they worth it!
This recipe was adapted from that a good friend of mine, AND she even made these! I love her, she is my new best friend. Thanks Nancy!
Cake:
1/2 C shortening
1 C sugar
2 egg yolks, beaten
5 T cocoa powder
1 tsp. baking powder
1 tsp. salt
2 C sifted flour
1 tsp. baking soda
1 C milk
1 tsp. vanilla
Cream together shortening and sugar then add the beaten egg yolks in a large bowl.
Sift together cocoa, baking powder, salt, flour and soda in a separate bowl.
In a small bowl mix the milk and vanilla.
Add the dry ingredients to the large bowl, alternating with the milk/vanilla, blending each time.
Drop by tablespoonfuls onto silicone mat on a cookie sheet. Bake at 375 degrees for 8 to 10 minutes. Cool cookies.
Toasted Marshmallow Filling:
12 T softened, unsalted butter
1C confectioners sugar
1/8 tsp. salt
2 C marshmallow fluff
6 large marshmallows

Beat butter and sugar with an electric mixer until smooth. Add salt and marshmallow fluff and beat again until combined. Toast marshmallows on the skewers under broiler or over gas stove. Make sure they are nice and toasty. Add the toasted marshmallows to the marshmallow fluff mixture and beat to combine. Place in refrigerator until needed.
Chocolate Ganache:
3/4 C heavy cream
2T unsalted butter
6 oz semisweet chocolate, chopped
Put the chocolate in a heatproof bowl. Heat cream and butter in a small saucepan until it simmers. Pour the cream/butter mixture over the chocolate, allowing it to sit for 2 minutes. After 2 minutes, beat with a fork until smooth.
Graham Cracker Crumbs:
Crumble 4 graham crackers and set aside.
To Assemble:
Dip inside of each cake in the chocolate ganache. Place in refrigerator, ganache side up. When the ganache is set, place 1T of the marshmallow filling on one of a cake and then top with the remaining cake half. Roll the edges of the whoopie pie in the graham cracker crumbs.
Store in an airtight container. Who are you kidding, there won’t be any left.
