Eggnog Coffee Cake Recipe
1 C room temperature butter
1 1/4 C sugar
1 C eggnog
1 1/2 t vanilla extract
2 C flour
1 t baking soda
1/4 t salt
1 1/4 c chopped pecans
1/4 c sugar
Preheat over to 350. Butter a 9″ bundt pan or six 4” mini bundt pans.
Cream butter and sugar together in an electric mixer until smooth.
Add the eggs, eggnog and vanilla to the butter mixture and blend.
In a separate bowl, combine the flour, baking soda and salt. Gradually add to the butter mixture.
If using a 9” pan, sprinkle half the cinnamon nut mixture into the bottom of the pan and top with half the batter. Repeat layering with remaining nuts then batter.
If using small pans, sprinkle cinnamon mixture into the bottom of the pans, top with a few spoonfuls of batter and repeat layering.
Bake approximately 50 minutes. Test by inserting a toothpick or cake tester to make sure it comes out crumb free.
Cool for 15 minutes before removing from pan.
