What makes this recipe so special? Beer, that’s what!
Stout Stacked Pancakes
½ cup stout
½ cup milk
2 eggs
1 tsp vanilla extract
2 tbsp oil
1 cup all purpose flour
1 tsp baking soda
pinch of salt
cooking spray (for griddle)
cooked bacon for garnish (optional)
Lightly beat eggs in large mixing bowl. Slowly mix in the stout, milk, vanilla, and oil. In a separate bowl, sift the flour, salt and the baking soda. Carefully combine flour mixture into the liquid mixture. Mix until batter is no longer lumpy. Careful to not over mix.
Heat a griddle on medium heat. Coat griddle with cooking spray. Pour pancake mixture onto griddle. Cook until both sides are golden brown. Garnish with two generous strips of thick cut bacon. Drizzle with a little bit of maple syrup. Enjoy immediately with a nice cup of hot coffee.
