Halloween is not just for kids. I swear! You too can dress up like a Superhero or a Unicorn Piñata, have all your friends over, and party late into the night. Or at least 9:30. And for your evening of Halloween entertaining, you may consider serving kit kats and drumstick lollies, but what you should make instead are some slightly bloody Avocado Deviled Eggs.
Slightly ghoulish but definitely delicious, this green take on a classic deviled egg will keep your party guests coming back for more. And what’s more? The fabulous decorations to go along with it! and now… for the recipe!
Bloody Avocado Deviled Eggs:
6 eggs
1 avocado
1/4 cup mayonnaise
1 T fresh lemon juice
salt & pepper
small can sliced black olives
small jar pimentos
any type of hot sauce
poppy seeds
Instructions:
Place eggs in medium sized sauce pan and fill with water to about 1 inch above the eggs. When water boils, turn off heat, cover the pan and let the eggs sit for 12 minutes. Rinse the eggs in cold water to stop the cooking process. Peel eggs when cool, slice in half length-wise and scoop out the yolks, putting them in a small bowl. Blend the egg yolks with 1/4 cup mayonnaise and set aside.
Peel the avocado, chop into cubes and place in small bowl. Add the lemon juice and mix until the avocado is fairly smooth. A few lumps are fine.
Combine the avocado mixture with the egg yolk mixture. Add salt and pepper to taste.
Either spoon the avocado/egg yolk mixture into the egg halves or use a pastry bag. Place one piece of sliced black olive on top of each egg and add a small piece of pimento in the center. Sprinkle poppy seeds on top and splatter hot sauce over everything.
Refrigerate until serving.
