Mint Chocolate Chip Waffles

When you are Irish, there is a ton of pressure to celebrate your heritage. Who am I kidding, you will get PINCHED if you don’t celebrate St. Patrick’s Day! This is the ONLY reason we came up with a recipe for Mint Chocolate Chip Waffles, with whip cream… really. I’m totally serious.

Okay, so maybe it’s more like any excuse for chocolate chips first thing in the morning? Also, you know your kids would flip for this! And while you are setting the table, be sure to put out some of our St. Patrick’s Day photo booth props. Our paper mustaches and Leprechaun hats will make for some hilarious pics to share on Instagram and Facebook – also, they will help you appear to be mom-of-the-year, even if you are spending the day in the same pajamas for the 27th day in a row. Wait, that’s just me.

Mint Chocolate Chip Waffles

1 1/3 cup all-purpose flour
1 T granulated sugar
1 t baking powder
1/2 t baking soda
1/2 t salt
1 cup milk
1 large egg
2 T butter, melted & brought to room temperature
1/2 t vanilla extract
1/2 t mint extract
a few drops green food coloring (optional)
3/4 cup mini semi-sweet chocolate chips
Whipped cream

In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt.
In a small bowl, whisk together milk, egg, butter, extracts, and food coloring. Add to dry ingredients and stir until blended. Mix in the chocolate chips.
Heat up your waffle iron. Add waffle batter and cook according to instructions. Transfer to plates. Repeat with remaining batter.
Serve warm with whipped cream. Add more chocolate chips, if desired. Makes about 12 waffles.
